Thinking a entering a car...but never done this before...
Running one car would involve say 3 drivers and how many pit/catering/strategy/pit board people/refueller etc?
Roughly how many are in your team and what roles do they do please (on average)?

For each stop, you'll need:
Refueller
Fireman (or firewoman!)
At least one mechanic to check stuff like oil levels, damage, tyres, etc.
Manager controlling the stop.
Now one of those roles can be taken by the driver coming out of the car if you're doing a stop, but generally you'll need at least 3 crew for a stop.
Better is 5, in case there's any running repairs needed, and then the driver coming out can help with the harnesses for the driver going in.
If you like those people and want to stay friends, consider getting some more guys to lend a hand so the first lot can get some sleep at some point ;)
Sorry - missed the part about catering + others.
Again, people can double up as caterers or pit signallers. It's all down to timing. A lot of teams rope in the significant others of mechanics and drivers to do catering and signalling.
Some teams get by on just a few helpers. Others have what seems to be a small army! Obviously the more you have, the more 'comfortable' they can all be - but then they all need to be fed...
